Their relationship is very sad in a way- they both need each other because they both have deep scars and holes in their heart. Joel needs a second chance for his daughter, and he truly cares for Ellie. Ellie never had parents or someone who really loved her looking after her, she'd always been alone. Joel became that person for her. They need each other to survive. It shows this on Ellie's part throughout winter, and in this scene.
